Pecans are quintessentially fall. Don’t you think so? Well my house does. From picking up pecans from the trees in front of DH’s parents house, to make yummy pecan pies! When I think about it, I am actually sad. Oldest Girl is allergic to tree nuts. I know unbelievable right?

Which we found out when she ate nuts just picked from the tree. I chuckle thinking about it. We all ate a bite of pecan as we were picking them up in the yard, and I turn around when i hear ” Mom my mouth feels funny”. Turn back around and her lip looks like Bubba Gump. First panic hits me and I scream for DH. He immediately starts laughing. I look at him like he grew five heads. (Normally he’s quite handsome) But when I back around to look at Oldest Girl I can’t help but laugh till my side hurts. She looked so pitiful. I really wish I had a picture of her. Hey maybe I can slip her a pecan and see if we can recreate that moment. No? Borderline Child Abuse? Okay it was just a thought!

Where was I? Oh why I wrote this post. I get a little carried away with anecdotes.

Spiced Pecans. SO yummy. I mean really. If you aren’t allergic you have to make some! Great snack and they can be made with a touch of heat or wonderfully sweet. I got a hankering for some and found a great recipe on allrecipes.com. Love this website! You can take a basic recipe and tweek it however you want! And you will learn that I tweek everything. Sometimes for good, sometimes not so good. I admit it I fail miserably sometimes! Even geniuses have to work with trial and error!

So here is the recipe. Hey! I totally heard you say that! I know I can be long winded, but there is so much to share with ya’ll. Forgive me for not having pictures of every step. Little Bit was on my hip and she limits my picture taking ability. 🙂

Spiced Pecans

2 egg whites

1 tbs vanilla

2 1/4 cups Pecans

1/2 cup white sugar

1/2 cup brown sugar

1/4 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp allspice*

* if you want more savory substitute 1/4 tsp cumin and 1/2 tsp cayenne. (DH likes it spicy! Sweet Heat!)

Preheat oven to 225.

Spray cookie sheet with non stick spray. Trust me do not skip this step. Your cookie sheet will thank you.

Combine egg whites and vanilla until fluffy. Use a hand mixer or your arm will feel like jello.

Fold in pecans to coat evenly. Use a rubber spatula.

Combine sugar, salt and/or spices.  I made both.

Add to pecans then add to the pan. (here is where my pictures begin. Thanks Little Bit)

Baked until toasted and fragrant. Turning every 15 minutes for about an hour.

You will notice that it gets stickier before it gets toasted.

Just keep stirring…

Once toasted, cool in pan and store in air tight container.

is more like an obsession. That is why I absolutely adore fall! Not to mention, the great sweaters, boots, and scarves. But since this us a baking blog I will stick to all the great food! I have been quite busy today making great recipes and cant wait to share them with you! We made pumpkin cookies with cream cheese frosting. Yum is an understatement! These are so good! Dear Hubby aka my “Official Taste Tester” is going to get a slap on the wrist if he keeps eating them!

Next we made Oatmeal Craisin Chocolate Drizzle Cookies! They are a little on the crunchy side, but none the less delicious! Super easy to make and contains no eggs! Love them!

And last but not least, Pumpkin Bread. Now I have made this recipe countless times but, I used a different ingredient this time. I used Cinnamon Morsels! Can I tell you how amazing they are. Little drops of happiness! They totally took my bread to a whole new level!
